Lose the Baby Weight and Clean Eating Week 2

As promised, here are my favorite meals throughout my second week of clean eating. I was much better about preparing snacks this week to bring to work so I included those as well.

I've actually lost two pounds pounds since I've started! I hardly feel like I am dieting because I eat when I am hungry and my main meals are large, they just happen to be mostly fruits and veggies.



Breakfast: Mostly Bobs 7 Grain Hot Cereal mixed with berries. On the days I worked out I ate a banana right when I woke up and then had a Quest bar post work out (the cinnamon bun bar is my fav). One morning I was running really late and let myself enjoy a tall vanilla soy latte from Starbucks. It was worth every sip!

Lunch: Salad, salad and more salad. Spring mix and Kale (Chopped into smaller pieces) with chick peas and avocado and apples. I love mixing extra virgin olive oil with Mrs. Dash Lemon Pepper seasoning for dressing. I had a Chipotle salad one day sans cheese and sour cream.

Dinner: We had a lot of great dinners this week. These are the meals that I have to make sure I plan out the most so we don't spend too much money at the grocery store. We had turkey burgers with avocado and tatziki, ground turkey "taco salad", zucchini noodles and meatballs, brown rice pasta with an avocado cream sauce, speghetti squash with feta, zucchini and kalamata olives, and one pan eggs with mixed veggies.

Cheat Meal: One night we had some friends over for dinner and I made them Inspiralized Zucchini noodle, bacon and shrimp scampi. It was delish and I was really proud of myself for not making something that was way out of the parameters of clean eating. Because of the bacon, this was my cheat meal though.

*If I am craving something sweet after dinner I have a square of 80% Cocoa Dark Chocolate.

Snacks: Wasa crackers with hummus and olive tapanade, cherries, Ezekiel toast with PB2 and bananas, apples with PB2 or an orange. Lara bars are another favorite and almonds.

Challenges: The weather was not cooperating this week and there were a few days I had to leave the house late because of ice on the road and I couldn't get into work early enough to get to the gym. I also have been having a hard time waking up and getting going because Austin has been waking up for a bottle at 3:00am instead of 5:00am. If he is up at 5:00am I just stay up, but 3:00am is too early and then by the time I fall back asleep, it's a deep sleep and getting up again is tough. I will find get into a better morning groove soon.

Inspiration: The fact that I am losing weight (I feel it in my clothes) is really helpful. As always, #fitmoms on Instagram give me a little boost of inspiration too. I also feel great, not stuffed and bloated after dinner and I have more energy throughout the day. I also am starting to forget what I used to eat, I love that.

New love: PB2 mixed with almond milk and I just picked up the chocolate PB2 and it's delish. Also Chocolate chip cookie dough Lara Bars are soooooo good.
