Champagne and Redbull Jello Shots

My husband and I came up with this jello shot idea together. He really wanted me to do a  shot with the new red bull flavors (my vodka and Redbull jello shot is one of my most popular).

I was hesitant because I've been wanting to keep my cocktails holiday related but then I realized that champagne and Redbull for New Years Eve is perfect!

With a new baby in the house we try to get all the sleep we can and waiting for the ball to drop will be seriously hard this year. I don't know if we will be able to stay awake until midnight!

But if we had some Redbull ... that might make it a little easier.

I made a shot for each new flavor. First is the "Blue Edition" blueberry. I really liked the flavor of the blueberry (it's very sweet) and was happy that the color was purple and not blue.

I added two blue berries to make it pretty.

The second new flavor is the "Silver Edition" lime. I added a lime rind twist for color. The flavor was very tart and similar to regular Redbull.

*If you wanted to try something other (stronger) than champagne I would recommend tequila.

And last but not least is the "Red Edition" cranberry flavor. I loved the cranberry! I added a sugared cranberry to make it festive. It's sweet and tart and tasty with the champagne.

You could also make cranberry Redbull and vodka shots with a sugared cranberry. Yum.

Cheers to attempting to stay up until midnight!

Blueberry Redbull and Champagne Jello Shots (makes a little over a dozen)
1 can Blue Edition Redbull
2 packets of Knox Gelatin
1 cup Champagne
30-ish blueberries
2oz plastic shot glasses (I buy these from amazon)
*For a stronger shot substitute vanilla or whipped cream flavored vodka for the champagne

1. Pour 1 cup of Blueberry Redbull into a sauce pan. Sprinkle one whole packet and then almost all of the second paket (I don't like to use a full two packets because it makes the jello too firm) on top and let it sit for a few minutes.

2. Whisk the gelatin and Redbull and turn on medium to high heat until simmering. Slowly (if you pour it too past it will bubble over) pour 1 cup cold champagne into the Redbull mixture.

3. Fill your shot glasses half way with the jello mixture and put them in the refrigerator. Set the rest of the jello mixture aside somewhere warm, I put it next to the stove. Wait about 40 mins for your shot glasses that are filled half way to harden. When firm add two blue berries and then fill with the rest of the jello.

4. Refrigerate until firm again and then serve.

Lime Redbull and Champagne Jello Shots

2 packets of Knox Gelatin
1 cup Champagne
2 limes for the rind twists
2oz plastic shot glasses (I buy these from amazon)
*For a stronger shot substitute tequila for the champagne

2. Whisk the gelatin and Redbull and turn on medium to high heat until simmering. Slowly (if you pour it too past it will bubble over) pour 1 cup cold champagne into the Redbull mixture.

3. Fill your shot glasses with the jello mixture and put them in the refrigerator. Wait about 60 mins until the jello is firm.

4. Before serving, use a veggie peeler to take the rind off of limes and twist them. (I peel the rind and then use a knife to cut them in thin slices and then twist)
